Michelle’s Corned Beef Hash


500g of diced boiled potatoes (skins on)
1 medium chopped onion
1/2 large can Corned Beef, diced
1 400g can of baked beans
2-3 handfuls chopped cabbage or kale
Worcestershire sauce, a few splashes to taste
2 eggs
Oil for frying

Serves 2

In a large frying pan heat a little oil over a medium heat add chopped onion and fry for a few minutes. Add pre-boiled diced potatoes mix and fry until starting to brown. Add diced Corned Beef and mix, add can of baked beans and mix, add chopped cabbage or kale and mix, add Worcestershire sauce, to taste, and mix. The mixture will be a bit sloppy, fry until brown and crusty underneath. Turn the mixture over in sections, the browned underneath will mix in, continue a couple of times until happy with the texture. On the last turn make two holes in the mix, so you can see the frying pan base, add a small amount of oil in each hole and an egg to each hole and continue cooking until eggs are cooked. Serve and enjoy.
